The best part is that you can alter these cookies to fit your family. But because they are oatmeal cookies they are also lactogenic and great for nursing moms!
You need:
500 gr oats
250gr butter (softened)
150 gr brown sugar (you can also use honey, maple syrup, or even 1 mashed banana)
3 eggs
50 gr flour (I used almond meal)
about 180 gr chopped almond slices
Optional: raisins or chocolate chips
Pre-heat oven to 350.
Beat butter smooth, add sugar and beat creamy. Add eggs and beat some more.
Now add flour, then oats, almonds and optional ingredients.
Press into balls and set on un-greased cookie sheet/ Bake at 350 for 18-20 min.
This made me smile: When I made them my son asked why there is chocolate in them, to which my husband answered "because Mami made them".
